Ingredients
2 pounds tuna steaks, cut into 24 equal sized cubes
16 large mushrooms, quartered
1 red pepper, seeded and cut in 8 pieces
4 green onions, cut in 12 pieces
Marinade:
1/3 cup reduced sodium soy sauce
1/3 cup dry sherry
2 tablespoons dark sesame oil
1 tablespoon minced fresh ginger
2 garlic cloves, finely chopped
1 packet sugar substitute
Instructions
Cooked tuna should be crispy on the outside and rare to medium rare on the inside like a steak. If you prefer your fish completely cooked through, substitute swordfish in this recipe and increase cooking time to 8 minutes.
1. On 8 skewers, alternately thread tuna cubes and vegetables. Combine marinade ingredients in a 9" x 13" baking dish. Lay skewers in dish and marinate 15 minutes.
2. Heat broiler or prepare a medium grill. Broil or grill tuna and veggies 3 minutes per side, just to sear (tuna should be rare in center).
