Chicken Burgers Mexicali
Ingredients:
2 pounds ground chicken
1 cup Atkins Bread Crumbs
3 green onions, chopped
2 cloves garlic, pushed through a press
1 egg, beaten
3 tablespoons chopped fresh cilantro, divided
1 tablespoon ground cumin
1 teaspoon salt
1/2 teaspoon chili powder
1 cup green salsa
1 medium avocado, peeled, pitted and cubed
2 tablespoons vegetable oil
Instructions:
1. Combine chicken, bread crumbs, green onions, garlic, egg, 1 tablespoon of the cilantro, cumin, salt and chili powder in a bowl. Mix well and shape into four 1"-thick patties. Place on a plate, cover and refrigerate 1 hour.
2. Meanwhile, mix salsa, avocado and remaining cilantro in a bowl and set aside.
3. Heat oil in a large skillet over medium-low heat and cook burgers 7 minutes on each side, until browned and cooked through. Serve with salsa mixture.
